
Well I am here to blogg about all three of these entrees because I actually did make each one of them this week, I didn't just walk the walk or "pepper" my sentences with names of recipes that I plucked out of some cookbook, I was busy in the kitchen!
First was the stuffed peppers. That was an easy one. You get peppers and you stuff them, end of story.
I stuffed mine with ground turkey mixed in with some Zattarains dirty rice. Now before you panic dirty rice isn't rice that I accidentally dropped on the floor or anything it's a spicy rice mixture, sort of New Orleans-ish. It's something I actually pick up at Aldi so basically you mix the meat with the rice and you cook it like on the box directions. Then I put the mixture in the peppers and viola, top with Mozzerella cheese at the end. It's a real inexpensive dinner.
The very same night, because I had the ingredients in house and they seems like a perfect food pairing, I also made the corn casserole.
Allow me go off on a tangent here for a moment since that simple statement really is the key to cooking. Like any job, you must have the right equipment and supplies. A painter doesn't just show up and paint, there is much prep involved before hand. Same with a plumber or carpenter and so it is the same with chefs, not that I am a chef but this info is key.
So I had these cravings for all three of these entrees and so I made sure I had the goods in the kitchen. I knew what I wanted to eat(actually I could have skipped the green peppers but they were requested by Bill) so it's always better if you have some clue what you really want or you will end up eating those generic chicken patties I have been writing about for years now with tater tots and ketchup.
The corn casserole was so fabu!! If anyone here has to bring something cheap to a party or gathering, let me know Ill send you the recipe because the first time I had this dish, I actually walked around the picnic I was at, asking who made it because I was not leaving until I had the recipe (along with most of the other people who had tried it). At first glance, it appears to be nothing more than corn bread but its so much more than that. So much more. And it's great because it looks AND tastes like you went to all this trouble.
Next on deck Kelseys Beet Salad, from teh show "Kelseys Essentials" from the cooking channel. It was out of this world. Bill who is not a fan of beets or goat cheese, ate two helpings. It consisted of roasted beets, mescaline salad greens, goat cheese, roasted almonds, and a vinaigrette dressing that you make yourself. I cannot stress how perfect these flavors go with each other. I am going to write Kelsey, since I am a fan and give her feedback on her recipe. I won't bore you all with the recipes but if you want them just ask.
So all that food and feeling very content this past week since I have my old phone back in my hands. AHHH it's amazing how that small change upset my entire week last week. I just felt so..... inadequate.
I had no need for all those icons staring back at me from the screen. I just don't care if I can watch You Tube while tubing down the Delaware. And reading books on it? ehh I want to hold a real book and smell the paper, I want to order my used books on amazon and have fantasies about the towns where they are being shipped from. Sometimes that is the decision maker. Right now I am reading a used book from the Dallas Public Library which was shipped out of Baltimore...... There are some food stains on a few pages. I wonder what they were eating........
